“Flies in the Soup and Maggots in the Marmalade: A Laboratory Exercise to Investigate Food Contamination by Insects” is an article that was accepted for publication in the journal Bioscene. Dr. Wyatt Hoback, assistant professor of Biology at the University of Nebraska at Kearney, and Megan Jehorek, a graduate who is a Biology/Secondary Education major who is currently student teaching, authored the article.
“In the article we talk about a laboratory exercise that we developed which allows students to investigate everyday foods for insect contamination. It turns out that the average American eats about 2.5 pounds of insect parts every year that get into food during harvest, processing, or post harvest,” said Hoback. “The lab asks students to search such foods as macaroni and cheese, jelly, and apple butter for contamination. We use the lab in several sections of General Biology.”
