Dining Services bringing back faculty, staff luncheons

KEARNEY – Faculty and staff lunches are making a return to the University of Nebraska at Kearney.

UNK Dining Services is hosting a faculty and staff luncheon from 11 a.m. to 1 p.m. Feb. 27 in the Sandhills Dining Room in the Nebraskan Student Union.

The buffet-style menu includes:

  • Honey baked chicken with apricots;
  • Braised beef with peppercorn demi-glace;
  • Herbed risotto;
  • Smashed potatoes with gravy;
  • Hawaiian carrots;
  • Lemon thyme asparagus;
  • Mixed green salad with choice of dressing; and
  • Chocolate cheesecake with raspberry sauce

“In the past, faculty and staff had their own dining hall for lunch. This is a concept we wanted to bring back,” said Shonna King, marketing manager for UNK Dining Services. “We are excited about providing these types of luncheons for faculty and staff, and hope everyone comes out to enjoy our specialty menu options.”

King said a faculty and staff lunch also is scheduled for March 18.

“We plan on doing these types of luncheons twice a month,” she said. “If the luncheons are successful, we would ultimately like to do them a couple of times a week.”

Lunch cost for those using Loper Dollars is $6.45, while cash and credit card purchases will be $8.06 (plus tax). Commuter lunch plans also are accepted.
