KEARNEY – University of Nebraska at Kearney faculty member Kaiti George was recently recognized for her commitment to education, nutrition and the Kearney community.
A senior lecturer in the Department of Kinesiology and Sport Sciences and sports dietitian for Loper Athletics, George received the Excellence in Education honor during last week’s Kearney Inspire Awards luncheon. The annual awards recognize outstanding women in business, education, healthcare and community service.
George has worked as a registered dietitian and licensed medical nutrition therapist in Kearney since 2003. Her professional experience covers pediatric and adult weight management, sports nutrition, wellness, heart disease, healthy cooking and food allergies. She is a fellow of the Academy of Nutrition and Dietetics and holds certifications in childhood weight management and functional gut health.
At UNK, George teaches courses in nutrition, food preparation, community nutrition and medical nutrition therapy while advising nutrition minors and mentoring students preparing for graduate school. Her pre-dietetics students have achieved a 100% graduate school placement rate. She also teaches at the University of Nebraska Medical Center.
George brings that same expertise to Loper Athletics, working with student-athletes, coaches and trainers to turn nutrition research into practical strategies that promote performance and long-term wellness.
Her career has included roles as a dietitian at Hy-Vee, consultant for Head Start, director of nutrition and education at the Nebraska Beef Council and nutrition program director for Building Healthy Families. She is an active member of the Academy of Nutrition and Dietetics and Nebraska Academy of Nutrition and Dietetics, where she has held elected and appointed positions.
“Through education, encouragement and example, Kaiti inspires students to keep learning and use their knowledge to improve the lives of others throughout Nebraska and beyond,” her nomination stated.
George has received numerous honors for her teaching and service. She received UNK’s Outstanding Faculty Teaching Award in 2025 and Outstanding Faculty Service Award in 2024, and the Nebraska Academy of Nutrition and Dietetics named her its 2024 Dietitian of the Year. She also received Kearney’s Healthy Community Education Award in 2013.
Beyond the classroom and athletics, George shares her expertise through research, presentations, cooking classes, community wellness programs and professional organizations, with an emphasis on making nutrition information practical and accessible.
The Kearney Inspire Awards recognize women for their professional accomplishments, leadership and contributions to the community. Finalists are selected by a panel of local business and community leaders, with one recipient honored in each of eight categories.
